For World Oceans Day, hundreds of Relais & Châteaux chefs, in partnership with Ethic Ocean, will celebrate with a Seaweed Symphony by featuring this revitalizing, “miracle” ingredient in menus, cooking classes, talks, excursions and more. In this film, we travel to Canlis in Seattle, Washington where chef Aisha Ibrahim delves into sourcing and the power to create a better food system as a chef. For Aisha: “We get to change the demand by opening guests’ eyes to something that they’ve never had before.”
